Meet Paul,
Raised in Galway, Paul’s formal culinary path grew under the mentorship of celebrated local chef JP McMahon. Over nearly a decade, Paul honed his skills across JP’s restaurants, including the acclaimed Aniar and Tartare, cultivating a deep respect for the origins of each ingredient and the individuals who supply them.
Leaving the professional kitchen to pursue law, Paul found renewed purpose in his craft—a sincere form of self-expression and connection. Foraging, sourcing local suppliers, and crafting tasting menus for private events deepened this symbiotic approach to cooking—one rooted in care for the food, the people who produce it, and the guests who make fine dining meaningful.
